Temperature is rock solid during the fermentation as the exothermic energy produced by the yeast acts as a counterweight to the cooling generated by the fermentation fridge. As the yeast ferments and alcohol is produced the specific heat of the beer changes and there is a corresponding change in the temperature differential. You can see this as the ambient temperature starts to rise towards the set temperature. In this example maximum fermentation happened around the 2nd August
